Bacon Egg & Cheese ‘Muffins’
a yummy and easy breakfast recipe!
12 slices of bacon
8-9 eggs, beaten
1/2 tsp. salt
grated colby jack (or your favorite) cheese
chopped green onion, optional
Grease muffin pan well and then place a piece of bacon in each cup, creating a little ‘muffin liner’ out of it by covering the sides and bottom of the cup. Beat together the eggs and salt and fill each muffin cup almost full. Sprinkle the tops with cheese and green onion and bake for 350°F for 20-30 minutes. These are SO yummy and so moist and so easy! Serve with some toast or muffins and a glass of juice 😉

Leah was pushing Isaiah on the swing out under the tree when Noah came along and wanted on, too. So they decided to do ‘double’. Leah told them she didn’t know if she could push them both, and Isaiah said, “Of course you can! You’re strong and innocent’. We don’t know how he put those two together, but it was funny!

He said, “Birds like them?!” Then he wondered if they really did, and wanted to throw one outside to see if they would eat it.
