Many of you know that Sherwood Films (makers of Fireproof) is making a new movie called Courageous.  We girls have subscribed to their YouTube channel to get their daily video updates and this is our favorite one so far.  Watch the background closely!

The Recipe Box

Applesauce Muffins

1 1/2 c. flour

1 1/2 t. baking powder

1/2 t. baking soda

1/2 t. cinnamon

1/2 t. allspice

1/4 t. nutmeg

1/4 t. salt

2 eggs

1 c. packed light brown sugar (or evaporated cane juice)

1/2 c. plus 3 T. oil

1 c. applesauce

Topping:

1 c. pecans or walnuts, chopped

1/4 t. cinnamon

1/4 t. allspice

1/4 t. nutmeg

  Combine topping ingredients and set aside. Mix together dry ingredients in a large bowl.  Beat together the eggs, sugar, oil and applesauce in a separate bowl.  Pour the wet ingredients into flour mixture and mix until just combined.   Divide the batter into greased muffin cups.  Sprinkle topping over the tops and bake at 400 degrees for 20 minutes.  Cool in pan on a rack for 5 minutes before removing.  Makes approx. 1 dozen.

Cute Quotes

      While making supper one night, Leah was told that Noah and Isaiah were saying naughty things to each other.  When I asked Noah what he had been saying, he said, “Nothing!  I didn’t say any questions that were bad!”

  We recently had the misfortune of a cat getting into the little chicks pen and killing all forty of them.  Three survived, only for her to come back and get them, too!  Kate’s little brother Isaiah was asking our Isaiah what happened to all our chicks.  Isaiah replied, “Umm…they all died, but three didn’t, but then their heads fell off!”

P.S.  If anyone would like a chicken killing calico cat, we would be happy to send her to you free of charge, free shipping included!  JK!

One day Charissa was talking to Leah in the van, and said, “…and we saw parachutes! But (in a disappointed/disgusted tone) they were AIRPLANE parachutes!” meaning paraplanes.

    all of your recipes are so yummy. I've never had applesauce muffins, but they sound so good. 🙂 wish I had some, but apples are very $$ here. 🙁 unfortunately.

    I think I remember reading that quote from the Kingdom books. I read all of the Kingdom series. Didn't get to read the Sir Kendrick Eric got and we don't have any other ones. Those are fun. 🙂

    Oh my! Naughty kitty!

    Mmm muffins… it's been a while since I made muffins! I don't have applesauce but I have some nice overripe bananas in the freezer that would make some tasty muffins. Hmmm. I think I know what we're having for breakfast tomorrow! 😉 Thanks!
