Along with September skies and crisp air comes harvesting even more of our garden. Right now it’s the sweet potatoes.

Last year we had a patch of sweet potatoes, it was the first time we tried growing them…and man did they look *SO* nice.  The plants grew and grew, the big, bushy, green vine plants just looked  really good! (And if I remember right there was actually hardly any weeds in the patch too!)  Summer came and went, Fall came and so did the frost! When we dug them up, they were all bad!!! :O It was terrible to have all that hard work go to waste, we considered not doing them this year, but a friend convinced us to try it again and gave us some sweet potato growing/harvesting advice. 🙂

 

So we tried it again this year. Our 100 plants looked great and this year we harvested them like your supposed to, before the first frost. As you can see we got quite a bit of potatoes!!!

 

 

And some that were huge!!!

We’re planning on making some sweet potato puree and sweet potato butter, but for now we’re enjoying some simple sweetness just by frying them in the oven.

 

Chop 2 large sweet potatoes,

 

Put in greased 9×13 pan.

 

 

Add 1/2 c. of coconut oil (or butter), on top of fries,

 

And sprinkle with salt and pepper.

 

Bake at 450° for about 30 min. until they are really soft. ( I “stir” them after about 10 min. when all the oil/butter is melted to get it on all the fries.)

 

Delicious! 🙂

    They look like really good potatoes! We have a recipe that uses grated sweet potatoes in a biscuit base which is really nice! 🙂

    In New Zealand, our sweet potatoes are called ‘kumara’. I’ve never heard of roasting them with coconut oil. Do you use it a lot?

      Hi, Rhoda,
      Yes, we do use coconut oil a lot, you can pretty much use it in anything you would use regular oil in. Depending on the type of recipe it will leave a slight coconut flavor, but we hardly notice it or if we do, we like it! 🙂

    The title for this entry reminds me of my grandma. She has a bakery called Simply Sweet (Home baked Goods) 🙂
