The Recipe Box
Italian Vegetable Spaghetti Casserole
2 spaghetti squash
2 lbs. sausage
4 zucchini, sliced
1 pepper, diced
2 celery stalks, chopped
8 carrots, chopped or shredded
2 heads broccoli, chopped
1 onion, chopped
2 garlic cloves, minced
4 T. olive oil
2 t. dried basil leaves
2 t. dried thyme leaves
1 t. salt
3/4 C. yogurt
1 batch buffalo wing sauce (recipe below)

Cook spaghetti squash*, cool then shred.
Cook the broccoli, carrots and zucchini in water, drain.
Saute the pepper, onion, garlic and celery in oil.
Mix everything in a large bowl.
Pour into two greased 9″ X 13″ baking pans.
Bake at 350 degrees for 25 minutes.
Can be topped with cheese if you can have it.
*Note: Here is another article by Chew the World that shows more ways to cook a spaghetti squash…especially if you’re in a hurry and want to do it in the microwave 🙂

Buffalo Wing Sauce
4 (15 oz.) cans tomato sauce
2 T. coconut oil
3 T. apple cider vinegar
3 T. honey
2 T. soy sauce
4 t. oregano
4 t. onion powder
1 garlic clove, minced
1 t. pepper
5 t. chili powder
~~~~~~~~~~~~~~~~
Mix all ingredients together and use as directed. Makes approximately 6-7 cups. Can also be used on chicken…delicious!

While in Cleveland with Mommy last weekend, (hopefully a post to come soon!) we went to an amazing art fair, and this was probably my favorite vendor 😉 The website isn’t extremely professional-looking, but the products are top-notch. I got to hold and feel just about everything you see on their website and they are amazing! The knitting needles and crochet hooks feel so good in your hands, not to mention they are very, very pretty!
