Quote of the Week

“Put each difficult thing in your hands and offer it up to Jesus.  You might be amazed at how God can transform that thing that is so painful to you into good for somebody else.”

The Recipe Box

We had a special request for these recipes…hope you enjoy!

Gaps-Legal Brownies

1/3 c. coconut oil (or butter)

1/2 c. coca powder

6 eggs

1/2 c. honey

1/2 t. salt

1/2 t. vanilla

1/2 c. coconut flour

1 c. nuts chopped  (optional)

In a saucepan at  low heat, melt butter and blend in cocoa powder. Remove from heat and let cool. In a bowl, beat together eggs, sugar, salt and vanilla. Stir in cocoa mixture. Add coconut flour and whisk the batter well untill there are no lumps. Fold in the nuts.  Pour batter into a greased 8” or 9” square baking pan.  Bake at 350′ for 25-35 minutes.

Gaps-Legal Tortillas

can also be used as hot dog buns

6 eggs, separated

2 t. honey

2 dashes of salt

5 T. plus 1 t. coconut flour

water

Beat egg whites and set aside.  Mix together the yolks, honey, salt, coconut flour and enough water to make it the consistency of pancake batter.  Let set a few minutes to let the coconut flour absorb the liquids.  Add more water if needed to keep it at a pancake batter consistency.  Fold in egg whites and bake on a greased griddle (we used coconut oil).  Makes 6 tortillas/’buns’.

Cute Quotes

Isaiah came to Mommy at about 8:30 p.m. and asked, “Can I get my night-nights (pajamas) on?”

This is highly unusual since we girls usually have to tell the boys several times at 10 p.m. to get ready for bed!)

Mommy said, “No, you can wait a little while.”

“But I want to have yogurt!”

The boys always get a little bit of yogurt before they go to bed, and it is usually right after they get ready for bed,  so he thought if he had is pajamas on, he could have yogurt!

Cassia was laying Isaiah down for a nap one day and laid her head on his back and said, “Thanks for the pillow!”

He replied, “It’s not a pillow, it’s me.”  😀

Leah asked the boys if they thought we should have another baby and they both said yes (and Isaiah said, “because we have some baby spoons!”), so she told them to pray and ask Jesus to give us another one.

Isaiah asked, “So Jesus has a lot of babies to build?”
