Peppermint Pigs
1 pkg. (18 oz.) refrigerated sugar cookie dough OR homemade sugar cookie dough (below)
1/3 c. butter, softened
1/3 c. shortening
2 c. flour
3/4 c. sugar
1 egg
1 T. milk
1 t. baking powder
1 t. vanilla
In a large bowl beat butter and shortening with an electric mixer on medium to high speed for 30 or until softened. Add about half the flour. Add sugar, egg, milk, baking powder, vanilla, and salt. Beat until combined. Beat or stir in remaining flour. Chill.
1/2 c. flour
3/4 t. peppermint extract
Red food coloring
White icing
colored M&M’s
Preheat oven to 350°F. Lightly grease cookie sheets. Remove dough from fridge; place in a large bowl. Let dough stand at room temperature about 15 min. Add flour, peppermint extract, and food coloring to dough. Add only a few drops of food coloring at a time; beat at medium speed until well blended and evenly colored. Divide dough into 20 equal pieces.
For each pig, shape 1 dough piece into 1 (1-inch) ball, 1 (1/2-inch) ball, and 2 (1/4-inch) balls. Flatten 1-inch ball to 1/4-inch-thick round; place on cookie sheet. Flatten 1/2-inch ball to 1/4-inch thick oval; lace on top of dough round for snout. Shape the 2 (1/4-inch) balls into triangles; fold point overand place at top of round for ears. Make indentations in snout with a wooden skewer for nostrils.
Bake 9 to 11 minutes or until set. Remove to wire reacks; cool completely. Use white icing and M&M’s to make eyes.
Makes approximately 20 cookies.

A couple of nights ago, Susannah was telling Noah and Isaiah a bedtime story.
“One time, a looonnnggg time ago, God made the very very first people…he made Adam out of the dirt, and Eve out of Adam’s rib…”
Noah: “Ewwww!”
Susannah: “Do you know what a rib is?”
Noah: “No.”
Susannah: *feels Noah’s ribs* “they’re right there.”
Noah: “Ewww!”
Noah: “Who was Adam’s daddy?”
Susannah: “He didn’t have a daddy or a mommy. God made them…they were the very very first people.”
Noah: “Were there people before them? Like people who died before them?”
Susannah: “No, they were the very first people.”
Susannah:”…and Adam and Eve had two little boys, kind of like you two boys, and their names were Cain and Abel, then they grew up big and strong…”
Isaiah: “How did they get bigger before us?”
Susannah: “This was a long time ago, before you boys were born…”
Isaiah: “Oh.”
Susannah: “God wanted them to bring a baby sheep for a sacrifice for their sins. Abel brought one but Cain decided he wanted to bring fruits and vegetables that he had grown. God was not happy with Cain’s sacrifice, but he was happy with Abel’s. Cain did not like that. He got mad at his brother and he was very naughty and killed Abel…”
*she finishes telling the story*
Isaiah: “So which one of us died? Noah or me?”
The other day Isaiah was watching the “pipes” screen saver on the computer and said, “It’s like spelling a tunnel!”
During our trip, Bekah was asking everyone if some brochures were theirs, but she didn’t ask Noah. Noah said, “Bekah, ask if they’re mine!” Bekah said, “They’re not yours.” to which Noah replied, “I know.”
In the country in Florida, several people have fences all around their property with gates across their driveways. Isaiah asked, “Why do people have to have cages?”
On election day last Tuesday Jessica, Leah and Susannah worked at the polls. A little boy (maybe 2 years old) came up the the table (that Susannah was working at) with his mother and Susannah smiled at him and said “hi!”. He kinda smiled and then exclaimed, “Mommy!! I’m shy!!”

Amen sister!!! 😀 Hehe! I am currently reading 3 books and it kind of drives me batty trying to keep up with them! Because usually what happens is I don’t read one (or some!) for a while and I can’t hardly stand not finishing a book! 😀 I am slowly working on my stack, though, and am making progress! I finished three books recently, two of which I had started several months to a year ago 😀 So anyhow…all that to say, ‘that’s right!’. We should keep learning. Old maids are more exciting that way! lol! 😀

I’m reading lots of books at the moment – five, I think. One for recreation, one for Bible, one for history, one for general reading, and one for intrapersonal. At the moment my school schedule consists of one hour per subject, and when I stick to that, I really fly through the books!
Josh, Nomi and I really, really enjoyed reading your stories, especially the first one! And I had to look twice at that photo of y’all with Abraham Lincoln; wasn’t expecting that!

I really, really enjoyed “Don’t Waste Your Life” and Emilie Barnes’ books. Have you seen her children’s books? I haven’t actually read “More Hours in my Day” but other similar books by her. I love it (and have since I was 10!! I’m a nut!)
