Pecan Sticky Muffins

2 c. flour

1 T. baking powder

1 t. cinnamon

1/4 t. salt

2 eggs

1 c. milk

1/4 c. oil

1/2 packed brown sugar (or evaporated cane juice)

1 t. vanilla extract

TOPPING:

1/4 c. melted butter

1/4 c. brown sugar (or evaporated cane juice)

1 c. chopped pecans

           In a large bowl, combine flour, baking powder, cinnamon, and salt.  In another bowl, beat the eggs milk, oil, sugar, and vanilla until smooth.  Stir in dry ingredients just until moistened.  Into each greased muffin tin, spoon 1 t. butter, 1 t. brown sugar, and 1 heaping T. of pecans.  Top each with approximately 1/4 cup of batter.  Bake at 350 degrees for 25 to 30 minutes.  Invert pan onto a piece of foil.  Let stand for 2 minutes and then remove the pan.  Serve warm.  Yields 1 dozen.

Cute Quotes

Isaiah:  “I’m just going to talk Noah something.” (tell him something)

       Noah told Leah: “Daddy likes deer because he shoots them.”  After thinking a little bit he added, “Or he tries to, but he never catched any.”  He is too little to remember the times that Daddy did “catch” a deer!

     Awhile ago, Bekah and Charissa were telling Leah what she could give them for Christmas.  They were both trying to get in as many things as possible before the other one butted in.  Once while Bekah was talking Charissa started to interupt, and Bekah said, “Wait!  I’m speeching!”

    Oh, I don't know! We have so many favorites! "In Christ Alone", "He is Faithful", "I am Your Shield", "Bright Lights", "Let My Life Be a Light" and "The Mind of Christ" are some of the top ones on my list…I know, I just listed half of the CD didn't I?! 😀

    Hey Jessica? Were you actually reading the book "King's Arrow" in the picture in the post below? I love that series from Vision Forum. All of the Douglass Bond books are excellent! (Perhaps written for a younger audience… but I don't care, the plots and writing style are amazing!)

    The video of the week is really interesting!!!! When I saw the title, I thought someone played a violn in the waiting room while another person went through Brain Surgry!!! Dumb me :-p
