The Recipe Box

Melt – in – your – mouth Sugar Cookies

1 C. butter, softened                                                                   4 C. plus 1 T. flour (we used half whole wheat)

1 C. oil                                                                                          1 t. cream of tartar

1 C. powdered sugar                                                                 1 t. salt

1 C. white sugar                                                                         1 t. soda

2 eggs

1 t. vanilla

     Cream together the first four ingredients and beat until light and fluffy.  Add in eggs, one at a time.  Add in vanilla.  Combine flour, salt, soda, and cream of tartar in a separate bowl.  Add to creamed mixture a little at a time mixing well between addiiteions.  Turn mixer to high speed and beat until light and fluffy.  Spoon out quarter sized dabs of dough and drop onto an ungreased cookie sheet.  Press each cookie lightly with the bottom of a glass that has been dipped in sugar.  Bake at 375 for 6 to 8 min. or until golden brown.  Serve with cold milk.

One day in March it was nice enough to open some windows.  I caught Noah and Isaiah sitting (!) on half in the window sill, half in the window together in one of them, enjoying the fresh air.  Noah told me, “It smell like the fair, it smell like hawduh (sawdust).  : )  Daddy had cut some wood outside, so the sawdust smell must have reminded him of all the sawdust they put down in the animal pens at the fair : )
