The Recipe Box

Chicken-Cheese Crêpes

 These are good with yummy oatmeal rolls! 

 

Chicken-Cheese Crêpes

6 tablespoons of butter

1/3 C. flour

a dash or two of salt

2 C. milk

1 C. chicken broth

1/2 C. shredded Swiss cheese (I also used cheddar cheese….mainly because I didn’t have enough Swiss 🙂 

2 T. snipped parsley

Several dashes bottled hot pepper sauce

2-1/2 oz. jar sliced mushrooms, drained and chopped

10 oz. frozen peas

2 C. cooked and chopped chicken

1/2 C. chopped red bell pepper

12 basic crêpes (recipe below)

Paprika (optional)

 

For cheese sauce, in a medium saucepan melt butter. Stir in flour and salt. Add milk and broth. Cook over medium heat until thick and bubbly. Stir in cheese, parsley, and hot sauce. Cook until cheese is melted and then take out 1-1/2 C. for later. Stir in drained mushrooms.

For filling, cook peas and drain. Combine peas, chicken, and red bell pepper and the reserved cheese sauce.

Spread 1/4 C. filling over the unbrowned side of each crêpe and roll them up placing them in a greased 12″ X 7″ baking pan. Pour the sauce over the crêpes and sprinkle with paprika. Bake at 370º F. for 18-20 minutes. Makes 6 servings.

I double the chicken-cheese crêpe recipe and do one and a half recipes of the crêpes.

 

Basic Crêpes

In a bowl combine 1 cup of flour, 1-1/2 cups of milk, 2 eggs, 1 tablespoon of cooking oil, and 1/4 teaspoon of salt and beat really well.

Spoon about 3 tablespoons of batter into a heated and greases skillet and cook until light brown. Cook only one side. Grease skillet occasionally. (The unfilled crêpes freeze well [up to four months] by placing a piece of wax paper between each one. )

    I read For One Moment by Christmas Carol Kauffman once, and loved it! I didn't know that she had written many other books. I'll have to check them out!

    Lol. It's been awhile since I've been here, sorry. I just got a wonderful reminder of why I like y'all's blog! It's so funny! I love that lost "cat" poster! How in the world can someone mix up a ferret and a cat?? And I loved the quote! Little kids are so cute:)

    Your "Are You Ready?" clip scared me! Or maybe I should say SURPRISED me:) It was quite unexpected! And my answer? YES! But it was a great reminder to live like He is coming soon. Thanks! I always need to be reminded of that!

    The Josh Harris clips were both funny and thought provoking:) The cute quote was… well, cute! I liked the picture and the whole rest of the post, but I will spare you my comments on each thing (Just a bit tedious!) 😀 Must go! Love and Hugs!

    That possum sign is too funny! 😀 Why city folks shouldn't move to the country indeed. 😉 Can you imagine finding a possum and keeping it, thinking it was someone's cat? I wonder at what point those people figured out what it was…
