We use to buy 6-8 packages of tortillas every time we went shopping for different meals (and the tortilla/cheese/marshmallow combination that some of us eat for lunch :-). All the tortilla recipes we have tried never really turned out. Last year we got a recipe from the Dixons that tasted good and actually stayed soft (that is, unless someone walks away from the pan of cooking tortillas to see what everybody is looking at on the computer! …uh…yes, it has happened!)! Well, since I’ve gone gluten free about four weeks ago, I (of course) couldn’t eat those yummy tortillas because they are made of wheat! Just yesterday I finally found a gluten free version of yummy tortillas!! They originally called for masa harina, soy flour, brown rice flour and corn starch. But…soy is not that great….we have no masa harina…and you certainly don’t want to do too much of corn starch. So, as you can see, I totally changed the recipe 🙂 They were a little more dry than a regular tortilla, but they tasted the same to me! 🙂
{Gluten Free} Flour Tortillas
(makes 8 tortillas that are gluten free and casein free)
2 c. Gluten Free All-Purpose Flour Mix (recipe below)
1 1/2 tsp. xanthan gum
2 tsp. sugar
1 tsp. salt
1 c. warm water
1. Add the dry ingredients to a large mixing bowl and mix the ingredients thoroughly.
2. Add the cup of warm water to the bowl and mix the dry goods into the water with your hand. Just squish it all up until all of the dry ingredients are no longer dry.
3. Separate the dough into 8 pieces and roll each piece into a ball. Place all but one of the dough balls back into the bowl and cover with plastic wrap until youre ready to work with them.
4. Sprinkle a clean, flat surface with a bit of rice flour and then roll you dough ball into a roughly circular shape. Get is as thin as possible.
5. Throw the tortilla onto a hot griddle and let it cook approximately 1 minute or until it has started puffing up. Flip the tortilla and cook the other side until is toasty as well.
6. Slide the cooked tortilla onto a waiting plate and repeat from step 4 until youve cooked all 8 tortillas.
{Gluten Free} All-Purpose Flour Mix
¾ C. brown rice flour
¾ C. arrowroot starch
¼ C. coconut flour
¼ C. almond meal
¼ C. millet flour
Mix together and store in a tightly sealed container until ready to use.

Why have you decided to go gluten free?
Julie, I have decided to go gluten free because of stomach issues I have had for years…and also headaches. Gluten can cause many problems, so that is why I am trying this. I think it is helping, but am not exactly sure. I hope to do a post soon on more of this! 🙂

Bee-you-tiful? It's a vitamin company, and they have a product called, Tummy Tuneup, and it REALLY works…when our family had stomach flu Christmas 2008, (we got it in our beds christmas night) :p And I had to do-you-know-what…afterward I opened a capsule, I mixed it with apple juice and drank it, and it helped me alot! (and the rest of the family!) There has been other times when Tried-and-True Tummy Tuneup worked out tummy aches.
