Even better, they’re gluten-free. 🙂 Cinnamon Bun Pancakes! Sounds delish right? It seems as if it would be more for dessert (with all the sugar!), but I ate them for breakfast. 🙂
1 1/2 Cups flour, I used a combination of millet flour, sorghum brown rice and arrow root. (you can use white flour to make it non gf)
3 Tablespoons sugar
1/2 teaspoon salt
4 teaspoons baking powder
1 Tablespoon cinnamon
2 eggs, beaten
1 cup milk
2 Tablespoons maple syrup
1/4 cup melted butter
1 Tablespoon vanilla
Put all the dry ingredients in a bowl. Whisk the dry ingredients together. Add the wet ingredients and whisk together until well combined. Â If it is really runny, add more flour.
Preheat a well greased griddle or large saute pan over medium heat. cook until brown on both sides.
They are yummy just like this but even better with frosting/syrup!!
To make frosting:
1 cup confectioners sugar
2 Tablespoons melted butter
2 Tablespoons milk
Whisk it all together until smooth and pouring consistency. If too think add milk, if too thin, add more sugar.
