The Recipe Box 

 Key Lime Bars

we found originally found this recipe here

 

Crust:

1 C. plus 2-1/2 T. graham cracker crumbs

1/3 C. sugar

5 T. butter (melted)

Filling:

3 large egg yolks

1-1/2 t. grated lime zest (we didn’t have it when we made it and it tasted fine without)

one 14 oz. can sweeteded condensed milk

2/3 C. key lime juice

green food coloring (optional)

Garnish:

1 C. heavy whipping cream

1/4 C. sugar

2 t. vanilla

Preheat oven to 350°. Make crust: Stir together graham cracker crumbs, sugar and butter in a small bowl. Press evenly into the bottom of an 8 in. square glass baking dish. Bake until dry and golden brown about 10 minutes. Let cool completely on a wire rack.

Make filling: Put egg yolks and lime zest in the bowl of an electric mixer. Mix on high speed until very thick, about 5 minutes. Reduce speed to medium. Add condensed mik in a slow steady stream. Raise speed to high; mix until thick, about 3 minutes. Reduce speed to low. Add lime juice; mix until combined.

Spread filling evenly over crust using a spatula. Bake, rotating halfway through, until filling is just set, about 10 minutes. Let cool compleately on a wire rack. Refrigerate at least 4 hours or overnight.

Make the garnish: Cut bars into 2 inch squares. Pour cream into a clean bowl of mixer with whisk attachment. Add sugar and flavoring. Mix on medium high speed until stiff peaks form. Garnish bars as you serve them with whipped topping and a lime slice.

Un-garnished bars can be stored in an airtight container in fridge for 3 days.

Double the recipe because everybody will want a second piece. 🙂

    Oh. Well I thought I was!!! LOL!! 😀 😀 By the way, Kelsye, if you want to do a big smiley face like I did 😀 this is what you do. Do a colon : than a capital D. Before you do the colon, make sure you put a space between that and your last word and after you do the smiley, too like this 😀

    is Madison okay? She hasn’t commented for 2 posts. My father said there weren’t any eartquakes in Seattle this week, but I’m still concerned.

    Okay, so the geologist who says that there is to be an earthquake says that the cause is the position of the moon. The moon will be in that dangerous position roughly until the 27th. So we still covet your prayers: this will be a stressful week.

    Kelsye, you can be the “Well-Grounded Spinster”, if you like! That sounds a bit more dignified than being grounded (like you’re in trouble!) 🙂

    If it’s any consolation, I wasn’t fond of flying, either–but after my trip last month, I could do it again!

    But only if somebody else is buying this time! 😀

    Ummmm I happen to LOVE key lime pie. Just saying… And I DO have cans of condensed milk if a box of key lime gets into one of the suitcases… 🙂
