The Recipe Box

Black Bean and Mango Salsa

1 c. cooked black beans

1 mango, peeled, seeded, and finely diced

1/2 med. red bell pepper, finely diced

1/2 med. green pepper, finely diced

1-2 T. red onion, finely diced

3/4 c. pineapple juice

the juice of 1 lime

1 T. chopped fresh cilantro leaves

pinch of cumin

salt, to taste

  Stir all ingredients together in a medium mixing bowl; cover with plastic wrap and frefrigerate to blend the flavors, at least 1 hour and up to 4 days.  Serve with tortilla chips…when Mommy first made this, we weren’t too sure about it, but once she let us try some, she had to make sure we didn’t eat it all up before she got to it!

Joyfully At Home

  We just recently came across this blog 🙂   I especially enjoyed reading this post on being a stay-at-home daughter…one who is not pining for the future, but living every moment!

Farmgirl Favorites

      Here recently, Leah and Jessica have been doing some geneology of our family.  We found out that our Grandpa Ezekiel Smith (seven “greats” ago!) fought in the Revolutionary War…here’s what we found:

        “Ezekiel Smith was a patriot of the Revolution and heard the first gun fired at Lexington that echoed round the world.  On the morning of the Memorial April 19, 1775, he was awakened by the shout of Paul Revere for liberty, and promptly, he with seventy other men stood bravely on the village green to repel the invaders led by Major Pitcairn.  And so throught [sic] that long struggle for liberty, we find the record of Ezekiel Smith good and clear.”

    And another place:

   “[He was] born in Connecticut.  He took an active part as a soldier of the Revolutionary war, and was with General Washinton and his army at Valley Forge during the memorable winter when  the American troops underwent such suffering there.”

   Cassia was especially happy about the fact he was with General Washington, which you can very well imagine if you saw yesterday’s post 🙂

Cute Quotes

      One evening Jessica called Isaiah to come inside–he was the only one in the backyard, and he was crying.  As he came up to the door he asked Jessica if the “little girls” were outside.  Jessica told him that all of the girls were inside. 

 Just to be sure, he asked again, “Is the wittle girls out-side?”

“No, they’re inside.”

Then he put his hand out to show someone “little” (someone that would only come to his waist!) and asked yet again, ” Is the wittle girls inside?”

Jessica finally figured out that he was worried that she meant only the older girls were inside, and not really ALL of us!  It was so cute how he referred to his three “little” sisters, who are really much, much bigger than him!

 

    This morning, Jessica was telling Mommy about a great, great uncle of ours who was killed during the Battle of the Bulge in World War II.  Anna overheard and asked, “What is a bulge?”

Jessica said, “It’s sort of like a bump”

“A bump?!  You said he was killed by a bulge!  He was killed by a bump?!”

“No! The Battle of the Bulge!”

“Why do they say ‘bulge’?  How come they just don’t say ‘bump’?”

Then they started laughing…”Battle of the Bump” just does not have the same ring to it!

  

When Charissa was quite a bit younger…about 4 or 5 years old, she said:

“I need some floss, some chicken is stuck in me!”
