The Recipe Box

 Key Lime Bars

we found originally found this recipe here

1 C. plus 2-1/2 T. graham cracker crumbs

1/3 C. sugar

5 T. butter (melted)

3 large egg yolks

1-1/2 t. grated lime zest (we didn’t have it when we made it and it tasted fine without)

one 14 oz. can sweeteded condensed milk

2/3 C. key lime juice

green food coloring (optional)

1 C. heavy whipping cream

1/4 C. sugar

2 t. vanilla

Preheat oven to 350°. Make crust: Stir together graham cracker crumbs, sugar and butter in a small bowl. Press evenly into the bottom of an 8 in. square glass baking dish. Bake until dry and golden brown about 10 minutes. Let cool completely on a wire rack.

Make filling: Put egg yolks and lime zest in the bowl of an electric mixer. Mix on high speed until very thick, about 5 minutes. Reduce speed to medium. Add condensed mik in a slow steady stream. Raise speed to high; mix until thick, about 3 minutes. Reduce speed to low. Add lime juice; mix until combined.

Spread filling evenly over crust using a spatula. Bake, rotating halfway through, until filling is just set, about 10 minutes. Let cool compleately on a wire rack. Refrigerate at least 4 hours or overnight.

Make the garnish: Cut bars into 2 inch squares. Pour cream into a clean bowl of mixer with whisk attachment. Add sugar and flavoring. Mix on medium high speed until stiff peaks form. Garnish bars as you serve them with whipped topping and a lime slice.

Un-garnished bars can be stored in an airtight container in fridge for 3 days.

Double the recipe because everybody will want a second piece. 🙂

This evening Charissa asked me, ” Is Mommy home?”

I said, “Yes”.

“Whew!”  she said with relief, “Now we have everybody home!”

Noah was up in my room and told me, “…I asked Daddy how much our house cost, and it was like, I forget, but it was a LOT  of money! And you know what? He said he buyed everything in our house, and I was like, “Whoa!”

Isaiah told me ” Just so you know, we had cookies out of you.” ( Without you)

Oh. Well I thought I was!!! LOL!! 😀 😀 By the way, Kelsye, if you want to do a big smiley face like I did 😀 this is what you do. Do a colon : than a capital D. Before you do the colon, make sure you put a space between that and your last word and after you do the smiley, too like this 😀
Does that help, M’dear (old)maiden?? LOL!

Welll…..then again……….if they all read my comment above Kelsye’s, then they don’t need help from two old ladies like us now, do they?! Hee, hee! Lol! 😀 😀

is Madison okay? She hasn’t commented for 2 posts. My father said there weren’t any eartquakes in Seattle this week, but I’m still concerned.

    • March 18, 2011 at 3:20 pm

Yes, I believe she is…I haven’t heard from her, but she was on Etsy 3 hours ago 🙂

  • March 18, 2011 at 3:37 pm

Oh, good! I’m so glad. It would be extremely terrible if anything happened to anybody! I’m praying for her and her family’s saftey. Thanks! 🙂

    • March 18, 2011 at 3:38 pm

Oops. I meant safety! lol! 😀

      • March 18, 2011 at 6:27 pm

Thanks, Hannah! I’m here. The earthquake is pending, hasn’t happened yet. 🙂 We’re still worried!

Jessica, nothing gets past you. 😉 If I want to go missing in action, I’ll have to stay off etsy! 😀

  • March 19, 2011 at 11:40 am

Okay, so the geologist who says that there is to be an earthquake says that the cause is the position of the moon. The moon will be in that dangerous position roughly until the 27th. So we still covet your prayers: this will be a stressful week.
Thanks for your concern, girls! ♥

Kelsye, you can be the “Well-Grounded Spinster”, if you like! That sounds a bit more dignified than being grounded (like you’re in trouble!) 🙂

If it’s any consolation, I wasn’t fond of flying, either–but after my trip last month, I could do it again!

But only if somebody else is buying this time! 😀
