Yummy cupcakes that not only taste good, but are gluten free!! This is the best gluten free cake I have had!  In June I made a gluten free vanilla cake from Bob’s Red Mill cake mix for my strawberry shortcake. This is heaps better! Bob’s Red Mill mix tasted…uh…well…(as Leah put it), like a cow 😀  Even Charissa (who doesn’t like anything gluten free) liked these!

Karina at GFG has a this wonderful recipe at her blog along with some great photos! She used mocha icing (recipe also on her blog) and I planned to do that too. Only a few problems came in my way.

1) we have no powdered sugar. That is a big problem since it is practily the main ingredient!

2) we have no coffee. I can’t have coffee.

3) I was going to replace the coffee with cappucino powder. We ran out.

4) I can’t have chocolate. Thus, I can’t us the cocoa powder it calls for.

I guess that is a bit more than a few problems, so I solved it all by just making regular icing after Jessica went to the store and bought me some powdered sugar. So, I have a creamy white topping and Karina has a creamy brown topping 🙂

Oh, and another thing I did different…

Millet flour is my new best baking friend, so I added a bit of it replacing some of the other flour. I really don’t know why I did that, but I love mixtures of flours. I sometimes can’t stand using a recipe that uses only one or two flours. But do whatever you like, if you ever make it. I really can’t see someone who is not gluten free making this just because I said they taste good! 🙂

 

So if you care to try one, come right on over before I eat them up…or before my sisters snatch them right from under my eyes! 🙂

    Those cupcakes look absolutely scrumptious! I’ve never had any gluten-free baked good before, but I’m guessing it turns out lighter than the non-gluten-free kind.

    Great pictures, and I love the new blog design!

      Actually non gluten free cakes and breads turn out lighter…although, these are light 🙂

    They look so yummy……….I have never tried any-thing gluten free before. I think I will now:) The post on FF was so pretty . Where did yall get those really pretty tea cups?

      We have gotten the tea cups from different places at different times 🙂 I know we’ve gotten several at “antique” stores, and some at a tea cup place in a mall. Roses & Tea Cups have lots of pretty ones, but I’m not sure if we’ve ever gotten any from there! 😀
